Egg Fast Recipe - Bulletproof Coconut Cocoa

This recipe came about simply because I was craving chocolate.  I don't drink coffee daily, so mixing up my beverages when on an Egg Fast is important to me.  I like to experience as many flavors as possible so I don't get tired of the Egg Fast before it's over.  If you're an adamant coffee drinker, you could just add 1 tsp of instant coffee to this to "pep" it up.  As with all Egg Fast recipes, this one can be used on any LCHF eating plan.  It's crazy-good and super chocolatey with just a hint of coconut!  ;)

Ingredients:
  • 1 cup boiling water
  • 4 teaspoons unsweetened cocoa powder
  • 3 packets Truvia
  • 2 tablespoons coconut oil

Directions:

1.  Combine the water, cocoa powder, Truvia, and coconut oil.  Blend in a "traditional" blender, with an immersion blender, or with a blender bottle until a frothy head is achieved.

 2.  Pour into an 8-ounce mug.  Enjoy!

Yields: 1 serving

Low-Carb, Low-Calorie Pumpkin Spice Latte

I am a sucker for McDonald's pumpkin spice latte!  Everyone knows that most coffee drinks (particularly from fast food establishments) are LOADED with calories and sugar!  Around the holidays I'm always a little more lenient with my calories and carbs; but once the New Year starts, I try to get right back on track.  Well, lately I've been craving one of those delicious coffees, so I figured it was high time to try to make a low-carb version so I could enjoy it guilt-free.  This is the result, and might I say that it was quite yummy!!!

Ingredients:
Directions:

1.  Combine all ingredients in a small saucepan and whisk over medium heat until thoroughly warmed.
2.  If desired, top with sugar-free whipped cream and a sprinkle of pumpkin pie spice.

Yields: 1 serving

LCHF Vanilla Cashew Milk

I use almond milk in all my smoothies and most of my cold coffees.  I have been buying almond milk (in bulk) from Costco for well over a year now!  It's the cheapest place to get it (at least it is in our area).  This week, I was really wanting a smoothie, but noticed that I was out of almond milk!  *Gasps*  Since almond milk is the only thing I currently need from Costco, it's not really worth the trip for me until I can build up my shopping list a little bit.  I thought about making some myself, but I didn't have any almonds either.  I was digging through my pantry, about to bite the bullet and make some milk from the dry milk in the cupboard (Meh!), when I stumbled upon a container of cashews.  They had been sitting uneaten near the back of the pantry for about 3 months, because they were the "unsalted" variety which the kid and the hubby don't really care for.  They were cheap though (from Aldi), so I couldn't bring myself to toss them, convincing myself that I could find a use for them eventually.  I had planned on roasting (and salting) them for the fam, but I decided instead to make cashew milk with some of them so I could get my smoothie fix! ;)  Oh. My. Goodness!  I'm SO glad I did!  I like this homemade cashew milk better than the almond milk I usually buy, and I can't wait to try it in all my favorite (former) almond milk-containing recipes!  If you only try ONE of my recipes for the rest of your life - make it THIS one!

Ingredients:
Directions:
  1. Place cashews in a medium bowl and cover with water.  Let sit for 2 hours.
  2. Drain cashews and rinse under running water.
  3. Place cashews into a blender.  Add the filtered water, Truvia, vanilla, and salt.
  4. Blend 1-2 minutes on high speed (I used the "Liquefy" setting on my Oster blender.)
  5. Strain cashew milk through a cheesecloth or one of these awesome nut milk bags.

Yields: about 5 cups

Egg Fast Recipe - Bulletproof Cider

I love apple cider.  So very much!  But let's face it, apple cider usually has a TON of brown sugar in it and is completely loaded with carbs!  A while back, I found this totally awesome sugar-free apple cider drink mix.  I actually purchased it so I could make low-carb apple-based alcoholic beverages (which it worked very well for, btw).  It's not carb-free, but it is very low-carb (4g per serving).  For an apple cider, that's pretty darn good!  Long story short, I wanted to make another Bulletproof Beverage for the Egg Fast.  I find that the more I mix up what I eat and drink, the longer I am able to stay on an Egg Fast without going completely insane!  ;)

Ingredients:
Directions:

1.  Combine the water, dry mix, coconut oil, and cinnamon.  Blend in a "traditional" blender, with an immersion blender, or with a blender bottle until thoroughly mixed.

Yields: 1 serving

Egg Fast Recipe - Bulletproof Coffee

Bulletproof coffee is an Egg Fast staple.  But BPC, as it is commonly referred to as, is enjoyed by many people, and not all of them are on an Egg Fast or are low-carbing.  People enjoy BPC because it contains good fats, fills you up for a while, curbs appetite, and gives you energy.  Pretty much all BPC recipes are the same, with a few variations here and there.  Some people add an egg to theirs (particularly when Egg Fasting), but this is not mandatory.  I drink my bulletproof beverages without eggs, and it has never hindered weight loss when on an Egg Fast or otherwise.

Ingredients:
  • 1 cup prepared, hot coffee
  • 1 tablespoon butter (salted or unsalted)
  • 1 tablespoon coconut oil
Directions:

1.  Combine the coffee, butter, and coconut oil.  Blend in a "traditional" blender, with an immersion blender, or with a blender bottle until a frothy head is achieved.

Yields: 1 serving

Egg Fast Recipe - Bulletproof Butterbeer

I am currently re-reading the Harry Potter series (for what has to be the 10th or 11th time).  Anyone who has read (or seen) the Harry Potter series will be familiar with "Butterbeer."  This is my low-carb take on the famous beverage of the Wizarding World.  I made it Egg Fast friendly, because I have a close friend who has been considering trying out an Egg Fast to jumpstart her weight loss.  She is a little wary of the Bulletproof Coffee because she prefers coffee drinks that don't taste anything like coffee.  She only likes those frosty, frou-frou, coffee beverages.  I explained to her that she could have any bulletproof beverage (coffee, tea, or even hot cocoa), and I think she's finally starting to come around. This recipe is for her.  Some people like to add eggs to their Bulletproof Beverage, and I think you could probably do that with this beverage as well (if that's your "bag").

Ingredients:
  • 1/2 cup boiling water
  • 2 tablespoons salted butter
  • 2 tablespoons DaVinci sugar-free caramel syrup
  • 3 drops rum extract
  • 1/2 cup diet cream soda, room temperature or heated
    Directions:

    1.  Combine the water, butter, caramel syrup, and rum extract.  Blend in a "traditional" blender, with an immersion blender, or with a blender bottle until a frothy head is achieved.

     2.  Pour into an 8-ounce (or larger) mug.  Add the diet cream soda and stir gently.

    Yields: 1 serving
